Sustainable farming is successful farming. Pig farmers also know they must produce food in a way that satisfies demand and respects the communities in which they live, and that to be successful, they must use resources in an economical, efficient way.
A clear, age-old example of sustainable animal agriculture is the cycle of using animal manure as a natural fertilizer for crops crops that, in turn, become feed for the animals.
Wise, forward-thinking agricultural practices are not just good for the planet and its people, but also good for business. Today, pig farmers have embraced an expanded concept of sustainability that encompasses more aspects of the pork production process.
In short, while sustainability has become a more mainstream concept in recent years, farmers long have understood the vital importance of sustainable agriculture. All areas of agriculture can have a positive and negative effect on the environment. The pork industry is committed to managing operations in the most environmentally responsible way possible. Conservation, recycling, land management, water quality, air quality and manure management are areas of priority for pig farmers for continuous improvement.
In recent decades, we have learned to do more with less. So the Anglo-Saxon pig became the French porc , which was Anglicized to pork ; the Anglo-Saxon cow became the French boeuf , which became beef ; and sheep became mouton , later mutton.
Even chicken got a new culinary name: pullet , which is the Anglicized version of the French poulet , and is now only used to refer to a young hen. All of those French terms are still the French words for those animals as well as their meat today.
The meat used here is Goodie pork roll, made by the OG Taylor ham producers. It's cut thin, and served on a soft Kaiser roll.
Don't be fooled by the spare, spartan surroundings; this small-town deli serves up a terrific Taylor ham sandwich, using Thumann's Jersey Made pork roll which the owner considers less greasy than traditional Taylor ham.
The meat gets grilled until perfectly crispy and topped with fresh eggs and cheese on a crusty roll. The sandwiches here are seriously stuffed, with thick slices of meat, yolky eggs, and cheese dripping off like molten yellow lava. Pop some quarters in the jukebox everyone from Adam Ant to George Strait and enjoy the great retro atmosphere with Jersey's version of the breakfast of champions.
